Mira and Kathrin are meeting with Fanny and Max from Kitchen Ferm Lab to have a first chat about drinks that can be made from things gr
owing on the orchard meadow. Fanny and Max have been involved in previous apple juice making and other experiments on site.
We go through the seasons, plants and flowers and fruit that could be harvested and processed collectively. And we settle on the leaves from the brambles to make a tea. The leaves need to get rolled into small balls and then ferment to make a black tea like flavour.
The planned picnic for 11th July seems the perfect moment to for making something whilst talking, and more on the flavour and fermentation process then.
